Craft, culture and care: the story behind the release of The Pastorale Series inspired by Massimo Bottura to support the mission of Food for Soul

Behind the scenes of the limited-edition mezcal created in collaboration with Santo de Piedra.

Born from an encounter between different traditions, territories and visions, The Pastorale Series is a collection of mezcal that celebrates craftsmanship, culture, and commitment to community.

Its name—Pastorale—is inspired by Beethoven’s Sixth Symphony, a tribute to nature, harmony, and renewal. A fitting reference for a project that looks to the future of craft and sustainability with both creativity and care.

This limited edition is the result of a collaboration between Santo de Piedra, a mezcal atelier nestled in the mountains of Oaxaca, Food for Soul and founder,  chef Massimo Bottura, who brought his radical creativity to the ancestral process of mezcal-making. Bottura’s interpretation marks the first chapter of a wider series, where different artists will reimagine mezcal through their own lens.

From field to bottle, every element of this collection has been curated with attention and intention. Two rare agaves, matured slowly at high altitudes for nearly 15 years, give this mezcal its layered complexity. During the artisanal crafting process, a small addition of juniper wood was used—recalling the traditional balsamic vinegar making of Modena—an understated but meaningful connection between places and stories.   

Every detail, from the choice of ingredients to the design of the bottle, reflects a deep respect for origin, sustainability, and innovation. The production site is located in a unique area where the winds from the Pacific and Atlantic briefly converge each year, lending the spirit a distinctive character shaped by its environment.

Only 2,506 numbered bottles have been released, including six hand-blown Murano glass editions—each one a unique piece of craft and beauty. The series will be launched through a series of private, invite-only events in cities around the world, and is available for pre-order exclusively through Santo de Piedra. Every bottle is made from recycled glass, sealed with natural beeswax, and packed using responsibly sourced materials, shipped via sea freight to reduce environmental impact.

Beyond the spirit itself, the collaboration supports two meaningful initiatives: the sustainable agave cultivation program developed by Santo de Piedra using the ancestral milpa method, and the social impact work of Food for Soul. A portion of proceeds from the sale of The Pastorale Series will be donated to support Food for Soul’s mission to prevent  food waste and social isolation through advocacy, education and shared meals around the table.
