Apple Donuts with Homemade Apple Scrap Caramel

FOR THE APPLE

  • 1 apple
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup or agave syrup
  • Juice from one orange
  • Melted butter
  • 1 sheet of puff pastry

FOR THE CARAMEL

  • Peels and cores from 2 apples (remove seeds)
  • 200 g (1 cup) granulated sugar
  • 100 ml (1/2 cup) water
  • 50 ml (1/4 cup) cream (optional for richness)
  • A pinch of salt

Start by slicing the apple into rounds and using a small round cutter to remove the cores. In a bowl, mix cinnamon, maple syrup, vanilla extract, and orange juice, and brush this flavorful mixture generously over the apple slices.

Next, take the puff pastry and cut it into strips about 1-2 cm wide. Carefully wrap each strip around the edges of the apple slices, creating a decorative border. Brush the wrapped apple slices with melted butter, then sprinkle them with cinnamon and a little brown sugar for added flavor.

Place the apple slices on a parchment-lined tray and bake them in a preheated oven at 180°C (350°F) for about 20 minutes, or until the pastry is golden and crisp. Once baked, let them cool slightly before drizzling with the homemade caramel sauce.

To make the caramel, gather the apple scraps—peels and cores—and place them in a saucepan with water. Simmer for about 30 minutes, allowing the scraps to soften and infuse the water with flavor. After straining the mixture, return the liquid to the saucepan and stir in brown sugar, a pinch of salt, and a splash of vanilla. Let it simmer on low heat for 15-20 minutes until it thickens into a smooth caramel. Allow the caramel to cool a bit before drizzling it generously over your apple donuts.
