Quinoa & Dried Fruit Scraps Crackers

  • 60g carrot pulp
  • 50g quinoa
  • 30g pecans
  • 30g cashews
  • 50g spelt flakes
  • 30g chia seeds, soaked
  • 20g sesame seeds
  • 20g sunflower seeds
  • 1 tbsp oil
  • A splash of water

Soak the chia seeds in a splash of water for about 20 minutes until they swell up. Cook the quinoa according to the package instructions, then drain any excess water.

Place all the ingredients in a bowl and knead until the mixture sticks together and forms a cohesive mass.

Spread the mixture thinly onto baking paper or a greased baking tray and press it down firmly.
Bake at 180°C (350°F) for 40-60 minutes until the dough is completely dried out and crispy.
